Your the first person whos said 20% total organs. Out of curiosity, where did you read that? I have only ever read 10% total organs.

Canned is better than kibble, yes, but it can still cause the same range of problems. You can get canned foods which are nothing but meat, but not all places have this & even canned can have the same amount of carbs, which are not particularly good for a ferrets system.

Thats why you have to chose the right canned foods. Some have just as many carbs as kibble but some have far fewer.  :)

And you're the first person who has questioned it. I read it on Holistic Ferret forum, even typed up the diet I feed mine (though, I started out with kibble as mine were kibble fed & I was a bit rusty on my ferret care, so it needed a lotta work initially). They all agreed it was a fine diet, never caused a worry other than I didn't have enough bone in their diet.

htsr4:
Holistic ferret usually recommend 10% total.

Thats where I got my info. I have never heard them say 20% total. Though I suppose it doesnt matter either way.
